To quote the great, late comic John Pinette “Do you know what has gluten in it? EVERYTHING!“ He wasn’t kidding. Since going gluten-free, I’ve been doing a deep dive in trying to convert traditional recipes to gluten-free. I’ve had some great successes like my gluten-free pizza dough and peach zucchini cake. Another successful recipe is for my cream of broccoli soup which is gluten free, delicious and easy to make. Plus, on a cold winter’s night there is nothing more satisfying than a warm hearty bowl of soup.
Even though I made this recipe gluten-free, you can use regular flour and it will work the same way. This recipe makes about 8-10 servings but you can cut it in half or double it to suit your needs. It is very adaptable.
